Apricot-banana breakfast smoothie

Ingredients

  • ½ cup rolled oats
  • 6 apricots, halved, pitted and roughly chopped
  • 2 medium bananas, peeled
  • 2 Tbsp. ground flaxseed
  • ½ cup plain almond milk (or more to reach desired consistency)
  • 2 Tbsp. honey

Directions

  • Soak oatmeal in 1 cup water for 20 minutes.
  • Dump oats into the blender along with fruits, flaxseed and almond milk. Pulse together. Add additional almond milk until the mixture reaches your desired consistency.
  • Add honey to taste, pulsing each time.
