Apricot-banana breakfast smoothie
- ½ cup rolled oats
- 6 apricots, halved, pitted and roughly chopped
- 2 medium bananas, peeled
- 2 Tbsp. ground flaxseed
- ½ cup plain almond milk (or more to reach desired consistency)
- 2 Tbsp. honey
- Soak oatmeal in 1 cup water for 20 minutes.
- Dump oats into the blender along with fruits, flaxseed and almond milk. Pulse together. Add additional almond milk until the mixture reaches your desired consistency.
- Add honey to taste, pulsing each time.
