Apricot-orange muffins

Ingredients

  • 1 cup chopped dried apricots
  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • ¾ cup sugar
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 egg
  • 1 cup Greek yogurt
  • ½ cup melted butter
  • 2 Tbsp. oil
  • 2 Tbsp. poppy seeds
  • 1 Tbsp. grated orange rind

Directions

  • Preheat oven to 400 F.
  • Boil two cups of water. Turn off heat, then drop in apricots and allow to soak for five minutes.
  • In a medium mixing bowl, combine flours,sugar, baking soda and salt.
  • In a separate bowl, mix together egg, yogurt, butter and oil.
  • Combine egg mixture with the dry ingredients, being careful not to overmix.
  • Fold in the apricot chunks, poppy seeds and orange rind.
  • Bake for 16-20 minutes or until golden brown on top. Cool on a wire rack for 10 minutes before serving.
