Blueberry parfait

  • 1 cup rolled oats
  • ½ cup almonds, crushed
  • ½ tsp. Ground cinnamon
  • 3 Tbsp. coconut oil, melted
  • 1 cup fresh blueberries
  • ½ cup fresh raspberries
  • 6 cups low-fat plain Greek yogurt


  • Preheat oven to 350 F. Mix oats, almonds, cinnamon and coconut oil in a bowl.
  • Line baking sheet with parchment paper. Spread oat mixture and bake for 10 minutes. Stir mixture and bake for 10 more. Remove mixture and let it cool completely.
  • In a container of your choosing, layer yogurt, berries and oat mixture until container if full.
