Cinnamon-rubbed pork loin

Ingredients

  • 1 tsp. sugar
  • 1 tsp. garlic powder
  • 1⁄2 tsp. salt
  • 1⁄2 tsp. allspice
  • 1⁄4 tsp. thyme
  • 1⁄4 tsp. nutmeg
  • 1⁄2 tsp. cinnamon
  • 1⁄4 tsp. black pepper
  • 1⁄4 tsp. red pepper
  • 2 tsp. extra-virgin olive oil
  • 1 lb. pork tenderloin

Directions

  • Preheat oven to 350 F.
  • Combine dry ingredients then rub onto pork until thoroughly covered, then let sit for 15 minutes.
  • In a medium skillet, heat oil on medium-high heat. Add pork, browning on all sides.
  • Place pork in baking pan and cook for 15 minutes or until internal temperature reaches at least 145 F. Turn pork occasionally to prevent rub from burning and turning bitter.
