Garlic-grilled chicken and vegetables

  • 1 pound skinless, boneless chicken breasts
  • 3 Tbsp. extra-virgin olive oil
  • 1 Tbsp. lemon juice
  • 1 clove of garlic, minced
  • 3 Tbsp. Italian seasoning
  • 1 pound cherry tomatoes, halved
  • 1 pound fresh green beans
  • 1 dash of salt
  • 1 dash of black pepper


  • Preheat oven to 350 F or set grill to medium/high heat.
  • In a bowl, combine 2 Tbsp. olive oil, lemon juice and garlic. Add chicken, thoroughly coating with mixture. Cover and let sit for 30 minutes in refrigerator.
  • Place tomatoes on a baking sheet, cover with remaining olive oil, seasonings and salt and pepper, then bake for 15 minutes. Steam green beans until tender.
  • Grill/bake chicken on each side until it is cooked through and juices run clear.
  • Transfer tomatoes, green beans and chicken to large serving plate and salt/pepper to taste.
