Garlic roasted carrots

Ingredients

  • 4 large garlic cloves, finely chopped
  • 1 pound of carrots, cleaned
  • 1 Tbsp. extra-virgin olive oil
  • ¼ cup of water
  • 1 dash of salt and black pepper
  • 2 Tbsp. chopped fresh parsley

Directions

  • Preheat oven to 400 F. Combine all ingredients into medium baking dish, cover dish with foil and bake for 30 minutes.
  • Remove foil and bake until all water has evaporated and carrots are brown and tender.
