Kale and sun-dried tomato salad

  • 6 cups organic baby kale medley
  • 1 cup pancetta, cooked
  • 1/4 cup sun-dried tomatoes, drained and chopped
  • 1/4 cup toasted pine nuts
  • 1 1/2 oz. Parmesan cheese, shaved
  • 2 Tbsp. fresh lemon juice
  • 1 garlic clove, crushed
  • 1/2 cup extra virgin olive oil
  • Salt and pepper


  • In a mixing bowl, combine lemon juice, crushed garlic, olive oil, salt and pepper; whisk well in a large salad bowl.
  • Gently combine organic baby kale, pancetta, tomatoes, and pine nuts.
  • Drizzle salad with dressing, top with Parmesan cheese and enjoy!
