  • 1 cup plain 0% Greek yogurt
  • 1 lbs. Russet potatoes, peeled, cut into 1-inch pieces
  • cup low-sodium vegetable broth, warmed
  • 2 Tbsp. unsalted butter, melted
  • 1 Tbsp. fresh chives, chopped
  • 1 tsp. salt
  • 1 tsp. freshly ground black pepper


  • Bring a pot of water to a boil. Add potatoes and cook until tender, about 15 minutes.
  • Drain and transfer potatoes to a bowl. Pour in warm broth and mash potatoes. Stir in yogurt, butter, chives, salt and pepper.
