Mushroom and barley soup

Ingredients

  • 1 lb. sliced fresh mushrooms
  • 3/4 cups barley
  • 6 cups vegetable broth
  • 1/2 cup celery, finely chopped
  • 1 tsp. chopped fresh thyme
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 3/4 cups diced carrots
  • 1 tsp. minced garlic
  • 1 cup onion, finely chopped
  • 1/4 cup extra-virgin olive oil

Directions

  • Heat oil in large pot over medium heat.
  • Stir in garlic, onion, carrots and celery until tender.
  • Stir in mushrooms and thyme, cook for additional 4 minutes.
  • Add vegetable broth and barley, bring to a boil then reduce heat to low.
  • Cover and simmer until barley is tender, roughly 50 minutes.
  • Salt and pepper to taste, garnish with fresh thyme.
