Mushroom and salmon kabobs

Ingredients

  • 1 lb. salmon fillet, chunked
  • 12 fresh mushrooms
  • 1 bell pepper, sliced
  • 1 purple onion, sliced
  • 1 cup grape tomatoes, sliced
  • 1 zucchini, sliced
  • 1 Tbsp. minced garlic
  • 1/3 cup extra-virgin olive oil
  • 3 Tbsp. lime juice
  • Salt and pepper to taste

Directions

  • Place salmon, mushrooms, onions, bell peppers and tomatoes in a sealable bag or bowl and add salt.
  • In a saucepan, heat olive oil, lime juice and garlic until garlic is tender.
  • Add garlic mixture to vegetables and fish, allow to marinate for 15 to 30 minutes.
  • Heat broiler or grill, skewer kabobs with marinated mixture (if using wood kabobs, soak in water for 30 minutes for best results).
  • Bring leftover marinade to a quick boil.
  • Cook for approximately 10 minutes, drizzling occasionally with cooked marinade.
