  • 1 cup Medjool dates, pitted, chopped and soaked in water to soften
  • 1 cup raw cashews
  • ½ cup hemp seeds
  • ½ cup sesame seeds
  • ¼ cup raw cacao powder
  • Pinch sea salt
  • 2 tablespoons coconut oil, melted
  • ¼ cup almond butterrn
  • 1 tablespoon vanilla extract
  • ½ cup unsweetened coconut flakes
  • ½ cup dried cherries


  • Remove dates from soaking water and pat dry. Combine the dates, cashews, seeds, cacao powder and sea salt in a food processor (or a strong blender). Pulse and process all the ingredients together until the texture is coarse.
  • Add the coconut oil, almond butter and vanilla. Pulse again until the mixture reaches a dough-like consistency. Remove from the blender or processor and place in a medium mixing bowl. Stir in the coconut and cherries. Mix well.
  • Transfer the mixture to an 8-by-12-inch dish. Place in the freezer for 30 minutes to harden. Cut into bars and store in an airtight container in the refrigerator for up to 1 week.
