Salmon stuffed mushrooms

Ingredients

  • 12-16 fresh mushrooms
  • 1/2 cup Havarti cheese, shredded
  • 1/2 lb. salmon fillet, finely chopped
  • 1/4 cup red/green bell pepper, finely chopped
  • 1 Tbsp. minced garlic
  • 1/4 cup extra-virgin olive oil

Directions

  • Heat oven to 350°F, line baking sheet with parchment paper.
  • In a large saucepan, add oil and garlic, cook until tender.
  • Add salmon to skillet and cook until salmon flakes, turning only once.
  • Clean and remove stems from mushrooms, then drizzle with garlic and oil from pan.
  • Chop salmon and mix in bell pepper and cheese.
  • Stuff mushrooms with salmon mix, then bake for 15 minutes or until caps are tender and cheese has melted.
  • Garnish with onion/chives.
