Spiced olives

Ingredients

  • 1 lb. high-quality olives (3 cups)
  • 1 lemon
  • 1 Tbsp. ground coriander
  • 1 Tbsp. ground cumint
  • 1 1/4 cup extra-virgin olive oil
  • 3 cloves minced garlic
  • 1 tsp. crushed red pepper

Directions

  • In a bowl, zest lemon and squeeze lemon juice on olives.
  • Heat 1/4 cup of olive oil on medium-low heat, add coriander, cumin and garlic. Cook until lightly brown.
  • Add heated mix, remaining olive oil and spices to olives and gently stir.
  • For best results, refrigerate, letting olives marinate for 5 to 7 days, stirring once daily.
