Ingredients

  • 3 lbs. sweet potatoes, peeled and cubed
  • 1 cup low-fat vanilla yogurt
  • 1⁄4 cup honey
  • 1 tsp. ground cinnamon
  • 1⁄2 tsp. nutmeg
  • 1⁄2 tsp. salt
  • 1 Tbsp. brown sugar
  • 1 cup pecans

Directions

  • Preheat oven to 350 F. Boil potatoes until tender, then drain.
  • After potatoes have cooled, mix in honey, yogurt, cinnamon, nutmeg, salt and brown sugar.
  • Mix until smooth then spread into baking dish.
  • Bake until hot or edges start to brown, roughly 30 minutes. Add pecans during the last 10 minutes of cooking or once dish is out of the oven.
