Tomato and mozzarella skewers

Ingredients

  • 1 pint cherry tomatoes (16)
  • 4 oz. mozzarella (16 cherry-sized balls)
  • 3/4 oz. fresh basil
  • 3 Tbsp. extra virgin olive oil
  • 2 Tbsp. balsamic vinegar
  • Sea salt and black pepper to taste

Directions

  • Wash and dry the tomatoes.
  • Using wooden skewers or toothpicks, place a tomato, folded basil leaf and mozzarella ball (up to six pieces on each skewer).
  • Mix balsamic vinegar, olive oil, sea salt and pepper into a bowl, then drizzle over skewers.
  • (Optional) Let the skewers chill in the refrigerator for approximately 15 minutes.
